Ingredients:
6 cup cauliflower
2 cup Low Sodium chicken broth (Pareve)
2 Tbsp Parmesan Cheese
1/4 tsp pepper
2 Tbsp fresh chive
2 Cups Water
4 cups low fat Mozzarella (Optional)
Directions: Remove the leaves and thick core from the cauliflower, coarsely chop. Add the cauliflower and chicken broth and water to a large pot and bring to a boil. Reduce the heat to a simmer, cover, and cook until the cauliflower is very soft and falling apart, about 15 minutes. (If using frozen cauliflower just boil for 1 minute until tender.) The add the parmesan cheese, pepper and chives and let it simmer for another 5-10 minutes. Divide it into 4, in each bowl add 1 cup of mozzarella cheese.
