Grilled Skewers

4 servings. Each Serving: 1 lean, 3 Green, 1 Healthy fat, 1.5 Condiments

Ingredients:

2.25 oz of Chicken Breast cubed

2 Sprigs of thyme

1 tsp Fresh Garlic

4 Tsp Olive Oil

1/4 tsp Black Pepper

1/8 tsp Salt

6 cups of veggies (I love peppers, zucchini, mushroom, tomatoes, eggplant, etc)

2 Tbsp Walden Farm Honey Mustard Dressing

1 Tsp Dijon Mustard

2 Tsp Low Sodium Soy Sauce

Directions:

In a Ziploc bag marinate the chicken with the oil, thyme, garlic, pepper and salt. Minimum 1 hour, I put it in the bag in the morning and leave it in the fridge all day. In another Ziploc bag add the veggies, Walden Farms Dressing, Dijon mustard and soy sauce. Let it marinate the same amount of time as the chicken. Take bamboo skewers and soak in water for about 15 minutes (this prevents them from burning). Slide on the skewers chicken and veggies. Grill on a BBQ
