Tuna Patty Cakes

Recipe Makes 4 Servings. Each serving is 1 Lean, 2 Green, 1 healthy fat, 1.75 Condiments


2 Cups of Egg Beaters

21 oz of drained tuna in a can (I used 1 larger can and 3 smaller cans)

2 Tsp Dijon Mustard

1/4 cup Fresh Parsley

2 cups diced celery

2 Tsp Fresh Garlic

2 Tsp Low Sodium Cajun or Seafood Seasoning

4 Tsp oil


Mash the tuna in a large bowl as finely as you can. Add in the egg beaters and mix. Add the mustard, parsley, celery, garlic, and Cajun seasoning.  Pour the oil in a frying pan on low to medium heat. The mixture will be liquidy but it will firm up. Using a 1/4 cup measuring cup pour circles into the pan. Do not press down on them or they will dry out. Let them cook until thye are brown and crispy on each side.

I like to top mine with Walden Farms Mustard Mayonnaise.
