1 Lean, 3 Green, 2 Healthy fats, 2Condiments
2 Cup Egg Beaters
1/2 cup diced Zucchini or eggplant
1/2 cup diced Broccoli or cauliflower
1/2 cup diced peppers
1 Tbsp Butter
1 Tbsp Parmesan Cheese
1/4 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
Preheat oven to 350 deg. In an 8×8 pan spread the butter all over the bottom and sides (leave remaining butter in pan). Put the egg beaters in a bowl and mix with spices. Pour the egg beaters in the pan and put in all the diced veggies. Top with Parmesan Cheese. Bake for 45 min uncovered or until golden crust on top.
This could be made pareve but replacing the butter with oil and leaving out the parmesan cheese.
