Parmessan Crusted Zucchini Fries

This is another great meal that combines your Lean and Green with your MF meals. Perfect with the potato crusted salmon!

3 Green, .5 Condiments

Ingredients:

1 Zucchini (270 GM, should be 1 1/2 cups)

5 Sprays of Pam

1 bag Parmesan Puffs

Directions:

Preheat the oven to 450 deg. Slice the zucchini in half (so you have 2 small zucchini) and then cut each half lengthwise. Slice until you have about 24 “French Fries” sized pieces. Place parmesan puffs in a ziplock bag and smash it up to a powder.  Place parchment paper on a cookie sheet. Coat zucchini in Pam. Then place them in the ziplock band shake so they get coated.  Lay the zucchini on the parchment paper (with space between them) and sprinkle remaining crushed parmesan on top. Place in oven 15-20 minutes or until crunchy.

NOTE: Keep an eye on it the first time you make them so they don’t burn. Also don’t touch them in the middle, they first get soft then crunchy. Also let them cool before removing from the paper.
