Potato Crusted Salmon

Nutrition support does not promote mixing your lean and green with the MF meals but there are times you will need to. For example before or after a fast when you are trying to get all your meals in. This is my FAVORITE meal of everything I make, I actually dream of fast days! The potatoes add a ton of flavor and help keep the fish super moist!

1 Lean, 1 Condiment, 1 MF meal

Ingredients:

1 piece of Salmon (about 6.4 oz so it cooks down to 5oz)

1 tsp Dijon Mustard

1 packet of Garlic Mashed Potatoes

1/2 cup of warm water

Directions:

Preheat oven to 400 deg. Place parchment paper in a pan and place salmon on top. From the water remove 1 tbsp. of water (you need a little less than 1/2 cup). Mix the remaining water with the potatoes and let it sit. Coat the top of the fish with the mustard then using a spoon place all the potatoes on top of the fish. Place it in the oven uncovered for 20-25 minutes.

My boyfriend likes his burnt (seriously!) so I leave it for 30 min:
