Chicken on a Bed of Leeks and Mushrooms

4 Servings. Each Serving 1 Lean, 3 Green, 1.5 Condiments


2 Leeks (Sliced into 2 cups)

Mushrooms: (Sliced into 4 cups)

2.25 lb Chicken Cutlets (Cut into cubes)

1 Cup Low Sodium Chicken Broth

1/4 tsp Salt

1 tsp thyme


In a pan brown all the chicken. Do not allow it to cook thru, just so the outside is mostly white. In that same pan add the leeks and saute in the chicken dripping. After a few minutes add the mushrooms. Once the mushrooms have shrunk, re-add the chicken as well as the broth, salt and thyme. Cook for another 10-15 minutes covered so that the chicken cooks thru.

NOTE: Still requires a healthy fat.
