Cheesy Tuna Fritters

So I made revolution rolls the other day and they were delicious BUT they are dairy. I wanted a reason to eat them so I came up with this delicious recipe. So until i make a pareve version of the rolls this will be my go to “burger”.

Servings 2 (6 patties each). Each Serving 1 Lean, 1.5 Green, 1.5 Condiments NEEDS 3/4 Healthy Fat

Ingredients:

7oz of Tuna from a Can

1/4 cup Egg Beaters

3/4 cup Lowfat Mozarella Cheese

1 1/2 cup Frozen Spinach (defrosted and squeezed out)

1/2 tsp Garlic Powder

1/4 tsp Salt

1 Tbsp Yellow Mustard (optional, without is only 1 condiment)

Pam for the Pan

Directions:

Preheat the oven to 350 degrees. In a bowl mash up the tuna as finely as you can. Then add the cheese, spinach, eggs and spices. Combine it very well. In a frying pan on medium/high heat spray a little pam and make 12 little patties. Let it sit for 2-3 minutes until it is browned then flip it over and allow it to brown on the other side. Once it is browned, place them on a cookie sheet or in a foil pan and bake in the oven for 15-20 minutes. Serve Fresh or Freeze as soon as they cool.

NOTE: To reheat frozen patties allow them to defrost and then place them in a 250 degree oven for 20-30 minutes to warm thru and remove the excess water.
