Hash Browns

Sometimes you just need comfort food, something that tastes like when you were younger. While this “hash” is definitely different it has the flavors and crunch and most importantly is healthy! It’s also a great way to use up leftover squash by just making a smaller portion. I even made 1 into a “Latke” shape, so it would be a delicious and healthy alternative to Latkes!

Serving 2, Each Serving: 3 Green, 1.5 Condiments and 1/16 protein (you can count it towards your “free extra protein” if you need)

Ingredients:

3 cups of Zoodles

1 Tbsp Fresh Chives

1/2 tsp Garlic Powder

1/4 tsp Salt

1/4 cup Egg Beaters

5 Sprays of Pam

Directions:

Heat a frying pan on medium to high heat and spray with pam. Add the zoodles, spices and eggs and stir. Let is sit till it starts to crisp up then break it up and flip the pieces and allow the other side to crisp up as well. Serve Fresh
