Chicken Fritters

These were created as a healthy alternative for myself and my kids but turns out they are also amazing for traveling with! They freeze well, can be eaten warm or cold and stay moist because of the zucchini inside!

Makes 4 Servings: Each serving is 1 Lean, 1 Green, 1 Condiment excluding Pam (Still Need 1 healthy fat and 2 servings of vegetables)

Sauce: 4 Servings. Each serving 1 healthy fat, .5 condiments

Ingredients:

2lb of ground white meat chicken (or turkey)

3/4 cup Egg Beaters

1 cube frozen garlic

1/4 tsp salt

1.5 Tbsp yellow mustard

1/4 black pepper

2 cup grated zucchini

Pam

Sauce:

6 Tbsp light mayonnaise

1 cube garlic

1/4 tsp salt

Directions:

In a bowl, mix all the ingredients together. Take a large frying pan and coat with a thin layer of Pam. Keep the heat on medium to low flame. The mixture will be sticky. Drop spoonfuls all over the pan and flatten them slightly so they look like patties. Leave them alone for at least 3-4 minutes. ONLY flip them when they are no longer sticking to the pan. They stay very moist so may not look like they are done even when they are. If you want, open one up to check.  For the sauce, mix all the ingredients in a bowl and serve on the side.
